Caramel Apple (Sucker) Mocktail Anyone?

Okay, I have to say, this one was SO much fun to recreate! If you grew up loving those caramel apple suckers, this drink will hit you right in the nostalgia feels.

Instead of store-bought caramel, I made my own homemade date caramel, and it's so good. Not only does it taste rich and delicious, but it’s also a lighter, whole-food option that pairs beautifully with tart green apple juice.

How to make Date Caramel & Green Apple Juice

Here’s how I did it: I soaked some dates in hot water, tossed them in my food processor with a splash of that date water, and blended until smooth and creamy. That’s it! Instant caramel without any added sugar.

And for the apple juice: I went with fresh green apple juice from my juicer, which gave it that crisp, tart bite I was looking for. But don’t worry, you don’t need a juicer to make this at home. A blender and a quick strain through a fine mesh strainer or cheesecloth will do the trick.

Ingredients (serves 1)

• 1 Tbs date “caramel”

• 4 oz green apple juice

• 1 oz lemon juice

• club soda

Batch (serves 6-8)

• ½ cup (8 tbsp) date “caramel”

• 2 cups (16 oz) green apple juice

• ½ cup (4 oz) lemon juice

• 2½–3 cups club soda (20–24 oz)

How To Make:

• Add 1 tbs date "caramel" to the bottom of your glass.

• Pour in the 4 oz green apple juice and 1 oz lemon juice, then give it a good stir.

• Top with ice and fill the rest of your glass with club soda.

• Garnish with a thin green apple slice and some caramel

This caramel apple mocktail has quickly become one of my favorites—it’s simple, fun, and tastes like childhood nostalgia with a grown-up twist. I promise it’ll be a crowd-pleaser at any gathering (or even just for yourself!).
