Summer is here and that means it’s watermelon mocktail season, girlies!
Summer In A Glass - Watermelon Mint Mocktail
This is the first of many watermelon mocktails I’ll be sharing this summer, and we’re kicking things off with a hydrating, non-bubbly one: my Watermelon Mint Mocktail made with coconut water.

This one is light, juicy, and refreshing, plus it’s bubble-free for anyone who doesn’t love carbonation (although feel free to top it with a splash of soda water or ginger beer if you’re craving a little fizz). It’s perfect for hot days, beach hangs, picnics, or any time you’re staring at a huge watermelon on your counter wondering what else to do with it besides just slicing and snacking.
Bonus points? I picked the mint straight from my garden and I swear it makes the flavor pop. If you’ve never muddled fresh mint with watermelon and lime you're in for a treat!

Ingredients:
5–6 watermelon cubes (about 1/2 cup)
1/2 lime, juiced
5–6 fresh mint leaves
4 oz coconut water
Garnish: mint sprig + mini watermelon wedge
How To Make It:
Muddle your watermelon cubes, lime juice, and mint leaves in a shaker or jar until the watermelon is nice and juicy and the mint is fragrant.
Add coconut water and shake with ice (or stir well if you don’t want to use a shaker).
Strain into a glass filled with fresh ice.
Garnish with a watermelon wedge and a sprig of mint.
Batch For Hosting (6–8 servings):
Batch Ingredients:
3 cups watermelon cubes
Juice of 3 limes
1 small handful of fresh mint leaves
3 cups coconut water
Muddle the watermelon, lime juice, and mint in a large pitcher or bowl.
Stir in the coconut water.
Let it chill in the fridge for at least 30 minutes to let the flavors infuse.
When ready to serve, strain into ice-filled glasses and garnish each with mint and watermelon.
*Tip: Wait to add ice until serving to avoid watering it down too much!
