Ingredients (serves 1)

• 5-7 fresh mint leaves

• 1 oz lime juice (fresh is best)

• 1/2 oz simple syrup - See below for how to make at home

• 2 oz pomegranate juice

• club soda

• Garnish: fresh mint and pomegranate seeds


How To Make:

Add your fresh mint leaves, simple syrup, and lime juice to a glass. Gently muddle to release the oils. Don’t over-muddle the mint (will get bitter). Then add the pomegranate juice and ice. Top with Club soda and stir. Garnish with mint and pomegranate seeds!


Batch (serves 6-8)

• 15-20 fresh mint leaves

• 6 oz fresh lime juice

• 4 oz simple syrup

• 12–14 oz pomegranate juice

• 1–1.5 liters club soda

• Garnish each glass: fresh mint and pomegranate seeds


How to Make Your Own Simple Syrup

Ingredients:

  • 1 cup granulated sugar, coconut sugar, brown sugar or cane sugar

  • 1 cup water

Instructions:

  1. Combine: In a small saucepan, combine the sugar and water.

  2. Heat: Place over medium heat, stirring occasionally, until the sugar has fully dissolved.

  3. Cool: Remove from heat and let it cool completely.

  4. Store: Pour the syrup into a clean, airtight container and store in the refrigerator for up to 2 weeks.

Notes:

  • For added flavor, infuse the syrup by adding herbs (like mint or rosemary), citrus peels, or spices (like cinnamon) to the mixture as it heats. Strain once the syrup has cooled.
